The Phoenix Cake Company was born from a simple idea: everyone deserves to enjoy great coffee, homemade cake and delicious desserts without feeling like they're missing out. As someone living with coeliac disease, I know how it feels to stand in a queue hoping there will be something you can eat, asking endless questions or watching everyone else enjoy dessert while you settle for the only "safe" option. usually a Brownie! I wanted to
change that. Today, The Phoenix Cake Company is a beautifully restored vintage horsebox travelling across Essex and beyond, serving speciality coffee, homemade bakes and seasonal dessert experiences at weddings, festivals, airshows, corporate events and private celebrations. Everything we serve is made in our dedicated gluten-free kitchen, giving every guest the freedom to simply choose what they fancy and enjoy it with confidence.
Meet Maria
Hi, I'm Maria. You'll usually find me behind the coffee machine, baking late into the evening before an event, or planning the next
adventure for The Phoenix Cake Company. After leaving the traditional bakery world, I wanted to build something that reflected everything I believe food should be welcoming, inclusive
and made with care. Every brownie, blondie, cookie and cake is homemade by me, and every event is treated as if it were my own. Whether you're visiting us at a village fête or booking the horsebox for your wedding, you'll always be greeted with a smile, a warm welcome and a great cup of coffee.
