Our Story

Our Passion

 Hi I'm Maria and i've been making cakes for over eighteen years. Long before gluten-free entered the conversation, baking was already part of who I was  the craft, the detail, the quiet joy of getting something just right. However, everything changed after a traumatic birth with my son.
What followed was a period of recovery, answers, and eventually the discovery that my coeliac gene had been activated. Suddenly, the food I’d always loved  and built my career around became something I had to completely rethink.

At first, gluten-free baking felt like a limitation. Too many recipes relied on shortcuts, heavy sweetness, or textures that simply didn’t live up to what cake should be. So I went back to basics using my experience, I started rebuilding recipes from the ground up testing, adjusting, and refusing to settle until the results stood proudly on their own. My goal was never to make good gluten-free cake. It was to make great cake that just happened to be gluten-free What began as a personal necessity grew into The Phoenix Cake Company, and eventually into a converted horse box  taking that same belief out into the world. Everything is baked in small batches and served with care, so no one feels singled out, limited, or left behind. This journey isn’t about dietary labels. It’s about resilience, inclusion, and raising the standard because gluten-free should never mean second best.

Where It All Began (Again)

The Phoenix Cake Company wasn’t built the easy way.

Before this, I was running a shop in a small village  the kind of place where everyone knows everyone, and word travels fast. On the surface, it sounds lovely. And parts of it were. But behind the scenes, it came with its own challenges. Alongside the long hours, rising costs, and staff pressures, there was also the reality of navigating people. The smiles to your face that didn’t always match what was said behind your back. The rumours, the judgement, the feeling of constantly being watched and having to prove yourself. It’s a different kind of pressure, and over time, it wears you down. There came a point where I had to step away not because I couldn’t keep going, but because I knew I deserved more than just pushing through something that no longer felt right. And that’s where The Phoenix Cake Company really began. Not just as a business, but as a fresh start. A chance to rebuild something on my own terms  with kindness, intention, and real connection at the centre of it. That’s why the little things matter here.

The messages on your coffee sleeve. The way you’re welcomed when you walk up. The feeling that, even for a moment, you can just breathe and be yourself without judgement. Because I know what it feels like to be on the other side of that.

The Phoenix stands for rising —not perfectly, not without scars, but stronger, clearer, and more certain of what actually matters. And that’s what this is built on now.

What You Can Expect From Us

 No two people walk up to the horsebox the same. Some people come for a quick coffee. Some come for the cake.
And some don’t even realise they needed a moment until they’re standing there. What you’ll always get is simple:

Good coffee, proper cake, and no judgement. You might get a message on your cup that hits a little deeper than expected. You might leave feeling lighter than when you arrived. Or you might just grab what you need and carry on with your day and that’s just as welcome.

Everything here is done with intention, but never pressure. Because not everything needs fixing. Sometimes you just need a breather, a bit of quiet, and something that makes you feel like yourself again. This isn’t just about what we serve it’s about how you feel when you leave.
